1. Combine chicken broth or water, peanut butter, brown sugar, lime juice, soy sauce, ginger and red pepper flakes in saucepan with wire whisk.
2. Cook over medium heat, stirring occasionally, until mixture comes to a boil. Cook 3 minutes, stirring constantly, or until thickened and smooth.*
3. Serve warm or at room temperature with your choice of breaded chicken fingers, chicken, beef, seafood or vegetable skewers. Garnish with chipped scallions or red pepper flakes, if desired. Refrigerate to store.
* If sauce becomes too thick, thin with water or additional chicken broth.
