Ingredients

  • 1/4 cup (1/2 stick) butter or margarine, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1-1/2 teaspoons freshly grated lemon peel
  • 1-1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup MOUNDS Sweetened Coconut Flakes
  • Powdered sugar

Directions

1. Heat oven to 300°F.

2. Beat butter, sugar, eggs and lemon peel in large bowl until well blended. Stir together flour, baking powder and salt; gradually add to lemon mixture, beating until blended. Stir in coconut. Cover; refrigerate dough about 1 hour or until firm enough to handle. Shape into 1-inch balls; roll in powdered sugar. Place 2 inches apart on ungreased cookie sheet.

3. Bake 15 to 18 minutes or until edges are set. Immediately remove from cookie sheet to wire rack. Cool completely. Makes about 48 cookies.

    I thought these tasted good but my kids weren't so impressed. They also went flat and didn't have the plump, crackled look like the picture. I don't think I will be using the recipe for my Christmas platter again.

    These cookies have been a hit for everyone who has tasted them. I add 1/2-1 extra tsp of lemon peel to give them even more lemon flavor. I leave the coconut out if someone doesn't like it.

    I made this recipe yesterday for my family and it was a big hit! They were super good and super easy to make. The kids had a great time rolling the cookie dough into the powdered sugar. The lemon and coconut pair perfectly together. I will definitely be making this again.
