Oatmeal Toffee Cookies

Ingredients

  • 1 cup butter or margarine
  • 2 cups light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1-3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups quick-cooking oats
  • 1-1/3 cups HEATH BITS 'O BRICKLE Toffee Bits
  • 1 cup MOUNDS Sweetened Coconut Flakes

Directions

  • 1. Heat oven to 375°F. Lightly grease cookie sheet or line with parchment paper. Beat butter, brown sugar, eggs and vanilla until well blended. Add flour, baking soda, cinnamon and salt; beat until blended.
  • 2. Stir in oats, toffee bits and coconut, if desired, with spoon. Drop dough by rounded teaspoons about 2 inches apart onto prepared cookie sheet.
  • 3. Bake 8 to 10 minutes or until edges are lightly browned. Cool 1 minute; remove to wire rack. Makes about 48 cookies

    Amazing. I made them without the coconut and they were still really good. Super soft and chewy, and the 2 cups of brown sugar gives them that almost caramel flavor. Will be adding these to my regular rotation!
    I am not much of a cook or baker. but this recipe is surprisingly easy and as soon as the cookies were done they were gone. They were delicious. I had to bake a second batch, (and I live alone!)
    Awesome cookies! Also I have put raisins in the cookies and made them even better!
    I am ashamed to say I eat most of these myself. This my absolute favorite cookie.
    This is without a doubt the best ever oatmeal cookie recipe. Disappears rapidly at my house.
    This recipe is AMAZING! This is HANDS DOWN the best oatmeal cookie I've ever baked. Everyone loved them - even the coconut haters! Take them out of oven right at 8 minutes. If you allow the edges to get brown they aren't as chewy (unless you like them crunchy). I've never been able to make a 100% butter recipe stay chewy (probably because of the coconut). This recipe is absolutely failproof and will be my go-to recipe forever. It's easy enough to swap out add-ins.
    This is a hit! Just make sure you don't get the cookies too brown; they should almost look light in color when removing from oven. Also, I really think the coconut makes this receipe even better. I add 1 cup of Hershey's minichips to batter since I love toffee and chocolate together.
    I've used this recipe for years. I only bake it at the holidays and I have requests from everyone I know to make sure I make enough for them! Omit coconut (yuck!) and add chocolate chips. Yummy in the tummy!
    These cookies are SO GOOD!! I use about half of the oats and substitute 1 to 1 1/2 cups of pecans instead.
    I made these for our vacation & I believe that they were all gone in 2 days-delicious-especially if you love toffee & coconut!

    Love this recipe. I add a package of butterscotch morsels and reach a new level of decadence with this cookie. I have not used the coconut flakes yet, but those and pecans are on my list of eventual add ins for this awesome recipe.
