Lemon Coconut Pixies Recipe

Lemon Coconut Pixies

  • 1/4 cup (1/2 stick) butter or margarine
  • 1 cup granulated sugar
  • 2 eggs
  • 1-1/2 teaspoons freshly grated lemon peel
  • 1-1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup MOUNDS Sweetened Coconut Flakes
  • 1/3 cup powdered sugar for rolling


  • 1. Beat butter, granulated sugar, eggs and lemon peel in large bowl until well blended. Stir together flour, baking powder and salt; gradually add to lemon mixture, beating until blended. Stir in coconut. Cover; refrigerate dough about 1 hour or until firm enough to handle.
  • 2. Heat oven to 300°F. Line cookie sheet with parchment paper or lightly grease. Shape into 1-inch balls; roll in powdered sugar. Place 2 inches apart on prepared cookie sheets.
  • 3. Bake 15 to 18 minutes or until edges are set. Slide parchment paper and cookies to wire rack or remove cookies from greased cookie sheet to wire rack. Cool completely. Store in tightly covered container in cool, dry place. Makes about 48 cookies.

    I thought these tasted good but my kids weren't so impressed. They also went flat and didn't have the plump, crackled look like the picture. I don't think I will be using the recipe for my Christmas platter again.
    These cookies have been a hit for everyone who has tasted them. I add 1/2-1 extra tsp of lemon peel to give them even more lemon flavor. I leave the coconut out if someone doesn't like it.
    I made this recipe yesterday for my family and it was a big hit! They were super good and super easy to make. The kids had a great time rolling the cookie dough into the powdered sugar. The lemon and coconut pair perfectly together. I will definitely be making this again.
    Of all the cookie recipes I have tried, this remains my favorite. It has the perfect combination of flavors, and such a wonderfully moist and chewy consistency that I couldn't believe I had made them myself. A terrific recipe!
