HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake

Ingredients

  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY'S Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING
HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake

Directions

  • 1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
  • 2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
  • 3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. Makes 12 servings.
  • VARIATIONS:
  • ONE-PAN CAKE: Grease and flour 13x9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.
  • THREE LAYER CAKE: Grease and flour three 8-inch round baking pans. Heat oven to 350°F. Pour batter into prepared pans. Bake 30 to 35 minutes. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost.
  • BUNDT CAKE: Grease and flour 12-cup fluted tube pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.
  • CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.
  • "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING
  • 1/2 cup (1 stick) butter or margarine
  • 2/3 cup HERSHEY'S Cocoa
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency.
  • Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.

    This cake is to die for. Don't listen to the negative comments - in all my years of baking chocolate cakes this is the most tastiest and moistest. This is the best chocolate cake recipe out there! :D (This cake does not sink if done correctly - make sure that the water is boiling)

    This cake is absolutely perfect! I made this for a county fair and took first place in the chocolate cake division AND first place overall shortened cakes!! This cake sold for over $600 at the cake auction - it's a real winner!! I substitute coffee for the water in the cake, and for the milk in the frosting, and it's delicious!! Would definitely recommend!
    I read a lot of mixed reviews about this recipe, but decided to try it any way. It turned out to be a hit! Usually my go to cake is from a prepackaged box but I think this tastes way better! I did think at first the batter was too thin, but after the cake was finished baking it was light, and fluffy.
    Made this cake today and it was a total flop. The cake sunk in the middle! I've been baking for 35 years and have NEVER had a cake sink. I quickly made a different chocolate cake recipe - so I controlled the "oven variable and it came out perfect! I was suspicious of the 2 cups of liquid - which is a lot for a cake - so I'm thinking the recipe is to blame. Won't be making this one again. Life is too short and there are too many other great recipes out there.
    I can't believe this recipe isn't 5 stars across the board. This is my "go to" cake. It's simply perfection. Each time I make it for someone new, they say it's the best cake they ever tasted. I use grape seed oil instead of vegetable oil and take it out minutes before it tests done. It finishes cooking in the pan and turns out moist and delicious every time. This cake is delicious!

    This is my favorite go to recipe for birthdays and weddings. It is moist and chocolaty. It freezes really well. It is great with buttercream frosting too if you are doing weddings.

    I made these into cupcakes and these did not rise. They sunk. I live 5,000 feet about sea level and thought is was the elevation. Was dissapointed as I had to make 60 and this recipe did not come for me. I believe 2 other comments were similar. Still not sure why it happened..
    I made this cake Saturday (2/28/15) for my son's 12th birthday, and it was a huge hit! I made it with 2 - 9" layers, and I recommend using 2 batches of the frosting. I only made 1 batch
    This cake was very moist even without the icing. I made mine using a bunt pan and just put a little drizzle of cream cheese frosting on it and everyone loved it. Next time I will try a layer cake with frosting too.

    where i used to work the cook was in her 80s and when she retired i took her position and in her recipe book i found this recipe that she tore off of a container of Hersheys cocoa so i tried it . It is the best chocolate cake i have ever had. I thought when the resturant closed down 2 yrs ago i would never find this recipe again so i started surfing recipe sites and finally found it so thanks Hersheys for having it on here my family will love it for dessert tonite.     This was the easiest and one of the most delicious chocolate cakes ever! My family loved it and the novice bakers want the recipe! I did use a confectioners sugar buttercream frosting with a little peppermint extract and sprinkled the top with crushed peppermints, since it was our Christmas dessert. Very Tasty! The scary part of making the cake is adding the boiling water--thank goodness for the "batter will be thin" warning!
    Has anyone tried this recipe using self-rising flour instead of all-purpose flour (and omitting the 1-1/2 teaspoons baking powder and 1-1/2 teaspoons baking soda)?

    This is a truly great Chocolate cake recipe for True Chocolate Lovers, for lots of reasons. I have been making if for years, and it never fails, and people always rave about it, so it has become my go to Chocolate cake recipe. It's VERY chocolatey, quick and easy to make, and it contains ingredients I already have on hand. The frosting is also excellent and VERY chocolatey, and I prefer it to most other Chocolate Buttercream recipes.

    I made this cake for my granddaughters 9th birthday. She wanted chocolate, and this recipe had a lot. Even my husband who rarely eats cake loved it too. I put candy kisses on the top of the cake, around the middle and on the bottom of the cake. It looked kind of like a dragons tail if you used your imagination. She loved it
    Absolutely the best chocolate cake ever. The great thing is you can change this recipe up and it is always awesome. At Christmas I add crushed peppermint candy in the icing; or, occasionally use one cup left over coffee (remember to bring to a boil) instead of boiling water. I've made it in layers, bundt , sheet cake and cupcakes--always delicious. It's good with raspberry jam glaze or served with fresh strawberries and whipped cream. The bundt cake is delicious sliced with a scoop of ice cream then drizzle with caramel and/or chocolate sauce. And, this cake is always moist. Can't beat it!
    This is the perfect chocolate cake. It reminds me of the chocolate cake I had a little girl. I made two modifications to make it 6 stars: 1) buttermilk instead of milk and 2) freshly brewed strong coffee for water. The coffee heightens the chocolate flavour with zero coffee taste. I love this cake. I've made it 13x9, cupcakes, 8' round and 9" round. Perfect every time! I've even froze it as part of an icecream cake and it had a lovely frozen consistency. I've made this recipe alot! A real crowdpleaser!

    My favorite chocolate cake and frosting recipe!! However, I slightly modify using oat flour, safflower oil with a touch of butter flavored extract, and sometimes I add nuts to the frosting. HEAVEN!!! :-)

    I've made this cake several times, both as a sheet cake and a layer cake, and it's always delicious. I follow the recipe to the letter.     I wonder why so many call this the best chocolate cake ever. It turned out ok, but not at all like a cake, more like a brownie. And since there is no chocolate in the cake, I don't really see it as a chocolate cake.. Anyway it tastes ok and I'm glad i tried it, at least I learned something :)
    This is a delicious cake! Mine sank and shriveled a bit in the middle, but my kids were running around while it was baking and I think that affected it. Wonderful cake and frosting recipe. I made a two layer cake. I don't usually make a cake or frosting from scratch, but with this recipe I will make this when I want a yummy chocolate cake!

    This is THE BEST chocolate cake i have ever had. I love chocolate and have found out i am allergic to soy. Well everything you buy in the store has soy in it (candy, cake, cookies etc.). I'm so glad I found this recipe. Now I can have my chocolate. My kids loved it too!

    I have tried several recipes from scratch and none of them came out right. This is the ONLY recipe which came out PERFECT. The batter was running. I checked all my ingredients 4 times to see if I am missing anything but no..it was all correct amount. I baked 2 cupcakes for 25 min on 350 F and it rose and perfect. Then I baked 6" cake, rose
    This cake is amazing. My neighbor makes it with a few modifications that put it over the top. It doesn't even need frosting! Use coffee for the water, special dark cocoa instead of regular, and mayonnaise for the oil. Just amazing.

    Very good cake. I made this cake 30 years ago and remember it being heavy and moist like a brownie. I loved it that way. My spouse just made it for my birthday and it turned out light and fluffy, and the icing was a bit runny.... however still tasted excellent. After reading many of the review it is my assumption that this recipe is very sensitive to change and is unpredictable. Hey....you can't beat a cake that still taste great even if someone flubs the recipe. That's what I call a Win Win situation!

    Best chocolate cake, ever. strongly recommend that you grease pans and then line with parchment paper and then grease and flour parchment. Cake is very moist and by using paper it comes out not only tasting perfect but looking perfect as well! I learned the hard way after my first attempt. Delicious, fudgy, moist cake.     What a scrumptious and too easy recipe! I baked the cake and made the frosting as subscribed and the cake disappeared within hours! A week later I added a box of instant pudding in the cake and it was super moist. I also substituted the Hershey's Cocoa in the frosting with 2 melted 4.25oz. bars of Hershey's Special Dark, and we couldn't tell the difference. This is the easiest and least expensive chocolate cake I have ever made and the chocoholics in my family gives Hershey's the praise hahahah.
    I made this for my family today and they LOVED it! It's really moist and I actually might do it for my kids birthday party this coming October!! It's amazing and I love how good the icing and cake is. Overall my favorite. The only down side, is that I made cupcakes instead and as soon as I took them out, they went flat at the top, but the taste was awesome and I still liked them overall.

    Literally the most amazing cake ever created in the history of man kind. I could literally eat this cake for days upon days upon day upon days. I made this cake for a birthday and the kids at the birthday just starting shoving it down their gullets and starting screaming with happiness. I'm so glad I chose this cake because I love cake.     I made this cake a week ago but changed out the frosting for a dark chocolate ganache frosting. Oh My WORD! It was awesome. I made this in cupcake format for church today and everyone went beserck over them. I added on top of the ganache some with fresh coconut, others with chopped pecans and others with just the topping. One lady told me her eyes rolled back in her head when she tasted it and said it was best cupcake she has ever tasted in her life. Way to go Hershey!

    After reading some reviews I was excited and nervous. Some loved it and some didn't. This is THE best chocolate cake ever! So easy and the frosting is to die for! If it didn't come out right then you did something wrong. You also have account for humidity and temperature in your area. Measure everything correctly and the right way. If its too runny you forgot something or didnt add enough flour in. If it baked over and got messy you put too much batter in it. Very simple recipe and mine came out perfect! Going to make for birthdays from now on!

    I love making this for any occasion. My daughter who is allergic to soy, yet LOVES chocolate can eat this any time. It has become a staple in our home. Everyone who tries it asks for the recipe. Its just that darn good.
    My grandmother made this for my 2 cousins and my sister and I all the time. She used to have to make 2 because the first was always gone within 5 minutes of us getting there. The trick to this cake is to leave it in the pan you are cooking in and frost it in the same pan.

    Just not that great. Too runny, cooked over the cupcake pans and were flat. More like a pancake batter than cake batter. Collapsed when removed from the pan. The flavor was OK, but nothing amazing. Box mixes have better flavor and results. I will keep shopping for my chocolate cake recipe.

    The cake was a bit messy. Overflowed my cake pans, and was very messy to get out. The frosting was a bit running, so I added some more powdered sugar. But none of that matter once everyone dug into the cake. It was wonderful! I will be making this cake again. Very moist and rich.

Well, it came out super chocolatey, and almost too sweet for his taste. He also said it wasn't airy and fluffy as other box cakes I've made. I also thought the frosting was too sweet.     This is the only chocolate recipe I use. I made it for a grooms cake I was asked to make. I was asked to make a wedding cake for another wedding plus this cake for a grooms cake. Everyone at wedding said it tasted better than a popular bakery in town. I have so many request for it.

    This cake is so easy and so delicious. It is my go to recipe for chocolate cake. My hubby, who doesn't care for chocolate, loves it. I often frost it with 7 minute frosting or with vanilla buttercream, but the frosting in the recipe is great too. Also, if you want a darker flavor, you can sub strong, hot coffee for the hot water. It is always a hit, no matter where I take it.
    This is by far the most requested recipe I make. It is phenomenal! But here's the deal... do not try altering it. It will not work in a 9x13 pan or in two 8" rounds. It must be 9" rounds; if your batter is overflowing then you are not using 9" rounds. It also seems to be better the next day after I have left it sit in a glass covered cake pedestal over night; it seems to get more moist and gooey. I really like how the cake bakes flat and heavy, so I don't have to trim the center off to make an even 2 layer cake.

    I made this cake for an Oktoberfest celebration and it was delicious. The only thing I would recommend is lining the bottom of the cake pan with parchment paper and then grease it since my one layer stuck to the bottom of the pan. The texture and taste was excellent. My husband and guests complimented me on the cake, so this isn't just a one person review.

    We are dark chocolate fans, so I used Hershey's Special Dark Cocoa instead for my 10 year old daughter's birthday party. The girls LOVED it! However, all these reviews about the cake exploding in the oven, very true. Adjust your baking soda accordingly. When I first made this, I put in the amount of baking soda written in this recipe and the stupid cake was like one of those fourth of July charcoal snakes that just keeps growing and turns your sidewalk black. I changed the baking soda to 1/2 teaspoon instead of 1 1/2, which seems absolutely ridiculously high to me, but I'm at a high altitude and no humidity so 1/2 teaspoon works for me. For those of you with it blowing up in your oven, lower your baking soda and you'll see a difference. You won't regret giving it a second chance
    This recipe is making me clean my oven again! The batter was very thin and exploded, literally, in my oven. This recipe, other than the frosting, is far from perfect. Don't recommend.

    My Gramma made this when I was a little girl. I have passed the recipe to my daughter and she, I hope will pass it on to her daughter! It was first printed on the can of Hershey cocoa and was called Hot Water Cake, I believe or Hershey's Hot Water Cake. It's the very best, very moist cake I've ever had or made.     Made this cake for the first time a few months ago with wheat flour only & it was a runny mess in my oven. Retried it yesterday for my daughter's 11th birthday and it was absolutely delicious! I'll never by another boxed cake mix! :)
    OH MY GOD!!!! My husband and i devoured this. I used 2 10" round pans and made 4 layers. I made extra icing and put between. It seeped into the layers a little bit overnight and it tasted even better the next day!!! Tip on the icing: use a whisk and stir gently by hand. For some reason when i did the exact same thing with the mixer, it came out too watery. Also, butter should be just melted, and no so hot that it is separating. ENJOY!
    This cake is one of the best I've ever made. I do add 3/4 cup oil instead of 1/2 cup to make it more moist, and it is delicious! I have taken it to gatherings of friends and family, and it is always a hit. Rich, moist and chocolatey...my kind of cake!
    I followed the directions and put the batter into two standard 9-inch round baking pans, but both pans spilled over in my oven!! I didn't know what to do! I kept baking because the cake looked fine in general and it was for my dad's birthday, but I was afraid the smoke detector would sound or the spilled-over cake would catch fire. Recipe calls for 1/3 cup I used about 2/3 or more because although it was good, it was thick, hard to spread, and a little too sugary and grainy.     This recipe is so reliable--follow the directions EXACTLY. Don't try Splenda, don't adjust anything and it will turn out great.     I have, as the other reviewer said, officially dumped all my other chocolate cake recipes (except for one that was my mom's made with buttermilk that is divine) and my husband said that this is the best chocolate cake I have ever made (except again, for the chocolate buttermilk one). I have to say that not only is this easy - all ingredients dumped in one big bowl, use a hand mixer, add boiling water at end - took me 10 minutes. The cake rose perfectly and stayed up - no falling down. It was springy to the touch and the two layers made a very impressive cake. The frosting is perfect, too. I whipped up some whipping cream to top each slice off - absolute perfection. Glad I found this site and will search for more ideas! I will probably even use this for my July 4th sheet cake and make it in the 9 x 13 pan and use a white buttercream frosting so I can decorate the top in red stripes(raspberries) and blue stars (blueberries)!

    This is my mother's favorite chocolate cake. It is a plus that it is so easy and the ingredients are usually on hand. I made it recently when my daughter's future inlaws came for dinner. Her fiance loves peanut butter so I used Fluffy Peanut Butter Frosting from this wegbsite in between the layers. The cake was fabulous.
    This cake is awesome! It's well-written, easy to prepare and foolproof! The frosting literally tastes and has the creamy texture of the chocolate frosting in a tub . . . the cake is super moist. This is the kind of cake that makes every level of cook look good! My husband isn't even a big chocolate person and he LOVED it!!! The recipe is quit literal about the consistency of the batter . . . It is very runny and you literally have to pour it into the cake pan(s). I wouldn't want to try to make cupcakes with it. I checked on mine after baking for about 36-37 minutes. The edges looked a bit darker and "wet", but the toothpick in the center came out clean so I went ahead and took the cake out of the oven. I'm so glad that I did because as it cooled it took on the same appearance as the rest of the cake. When it was cut, the edge pieces were just as soft and moist as the ones in the center. Thanks, Hershey's for helping to make a 42-year-old beginning "scratch baker" look good! :)
    I made this recipe in cupcake form for my friends and they all had more than one! By the time I came around to having one they were all gone, so I can't tell you how I liked them. Based on the rave reviews my friends gave me, however, they were a hit. Definitely using this recipe again!
    This is my absolutely favorite chocolate cake. It's an easy recipe, very reliable. It keeps very well, too. Last time I made it, I ate the last piece 6 days after I baked it, and it was still great. Usually, though, it never lasts that long. It makes a great layer cake for decorating, but I'm more apt to bake it in a 13X9 pan because it's a great cake to take places. People always rave about it. The perfectly chocolate frosting is great, too.

    I have used this recipe before and loved it. I tried to make it today and it turned out awful. Instead of rising up, it rose out and all over my oven and my cupcake pan. Maybe it is baking at a different altitude of filling the pan up too much. Oh well. Hopefully it turns out next time.

I made the frosting recipe that comes with it only once and decided that the canned frosting was just as good without the extra effort, but I have used that recipe for other things because it is very good.

    I messed this up. I say I did because I've used similar recipes before and I know it SHOULD work. I thought I went by the recipe except for using 1/2 sugar and 1/2 Splenda. Could that have been what made it turn out flat and gummy? It's possible I measured something else wrong too but I don't know what. It was pretty hectic in my kitchen. I gave it 4 stars because the taste was excellent, just the texture was bad. I will try it again and be more careful to measure and NOT use Splenda. This is the first (and last) time I've ever baked with Splenda.
    Good. I made with cake flour, much better texture, almost tortey. Added cup of whipped cream to icing. Made one-layer 12 inch; cooked for 50 min. Can't wait to try with dark chocolate cocoa next time. Maybe add cardamon whipped cream layer.

    Sept. 29, 2009 I'm a year two student at the Sumter County Career Center and I'm taking the Culinary Arts class. Serveral students in my class have tried to impress my teacher with their "baking abilities" but I'm the only one that has won her over and I did it by making this cake. Also, not only did I impress my teacher, I also impress the students as well as the the other facilty and staff. On a regular ol' day, I would just be sitting in class and someone would come to the door begging my teacher to let me make them this cake. It's so easy to make, I just don't see how ANYONE could mess it up. It is so rich and full of flavor.

    I substituted whole wheat flour for 1/3 of the flour required (adds texture and makes taste a bit more interesting--I now substitute about 1/4 to 1/2 whole wheat flour in just about every recipe I make, from pancakes to chocolate chip cookies). I dumped 12oz of the special dark chocolate chips in the batter. I also increased the amount of frosting by 50%, though slightly reducing the proportion of sugar, and replacing 1/3 of the butter with Neufchatel. The results were great.

    This is my favorite cake of all time. I used to bake and decorate wedding and special occassion cakes and this recipe was always a hit! I have tried other chocolate cakes, but none compare to this one. It is quick, easy and very, very delicious! It goes great with a basic buttercream or a peanut butter icing. Enjoy!!!
