Chocolate Mint Nanaimo Bars Recipe

|1 cup||CHIPITS Mint Chocolate Chips (250 mL)|
|1/2 cup||butter (125 mL)|
|1 1/4 cups||graham wafer crumbs (300 mL)|
|1 cup||flaked coconut (250 mL)|
|1/2 cup||finely chopped walnuts or pecans (125 mL)||FILLING|
|2 cups||icing sugar (500 mL)|
|1/4 cup||butter, softened (50 mL)|
|3 tbsp||milk (45 mL)|
|2 tbsp||custard powder (30 mL)|
|1 tsp||mint extract (5 mL)||Green food colouring||MINT CHOCOLATE GLAZE|
|3/4 cup||CHIPITS Mint Chocolate Chips (175 mL)|
|2 tsp||vegetable oil (10 mL)|
- 1. BASE: In medium saucepan over low heat (or in large bowl in microwave) melt mint chocolate chips and butter. Stir in graham wafer crumbs, coconut and nuts. Press evenly into 9-inch (23 cm) square pan. Chill in refrigerator about 30 minutes.
2. FILLING: In small bowl, blend icing sugar, butter, milk, custard powder, mint extract and several drops of food colouring. Spread evenly over chilled base.
3. GLAZE: Melt mint chocolate chips with vegetable oil over hot water (or in microwave). Spread evenly over filling. Chill. Cut into bars.
Makes about 20 bars.
