Chocolate Mint Nanaimo Bars Recipe

1 cupCHIPITS Mint Chocolate Chips (250 mL)
1/2 cupbutter (125 mL)
1 1/4 cupsgraham wafer crumbs (300 mL)
1 cupflaked coconut (250 mL)
1/2 cupfinely chopped walnuts or pecans (125 mL)
2 cupsicing sugar (500 mL)
1/4 cupbutter, softened (50 mL)
3 tbspmilk (45 mL)
2 tbspcustard powder (30 mL)
1 tspmint extract (5 mL)
Green food colouring
3/4 cupCHIPITS Mint Chocolate Chips (175 mL)
2 tspvegetable oil (10 mL)


    1. BASE: In medium saucepan over low heat (or in large bowl in microwave) melt mint chocolate chips and butter. Stir in graham wafer crumbs, coconut and nuts. Press evenly into 9-inch (23 cm) square pan. Chill in refrigerator about 30 minutes.

    2. FILLING: In small bowl, blend icing sugar, butter, milk, custard powder, mint extract and several drops of food colouring. Spread evenly over chilled base.

    3. GLAZE: Melt mint chocolate chips with vegetable oil over hot water (or in microwave). Spread evenly over filling. Chill. Cut into bars.

    Makes about 20 bars.
