Oatmeal Cinnamon Chips Cookies

Things You'll Need
  • 1 cup (2 sticks) butter or margarine, softened
  • 1 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1-1/2 teaspoons vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2-1/2 cups quick-cooking oats
  • 1-2/3 cups (10-oz. pkg.) HERSHEY'S Cinnamon Chips
  • 3/4 cup raisins
How to Make

    1. Heat oven to 350°F.

    2. Beat butter, brown sugar and granulated sugar in bowl until creamy. Add eggs and vanilla; beat well. Combine flour and baking soda; add to butter mixture, beating well. Stir in oats, cinnamon chips and raisins (batter will be stiff). Drop by heaping teaspoons unto ungreased cookie sheet.

    3. Bake 10 to 12 minutes on until lightly browned. Cool 1 minute; remove from cookie sheet to wire rack. Makes about 48 cookies.

    BAR VARIATION: Spread batter into lightly greased 13x9x2-inch baking pan. Bake at 350°F. for 25 to 30 minutes or until golden brown. Cool; cut into bars. About 3 dozen bars.

    I'll add my variation to the rest, though it's a simple one: I simply omitted the raisins and cut the 1/3 cup sugar down to 1/4 cup. They're great! Definitely skew the time in the oven to "less" rather than "more."

    This recipe was great but I didn't have quick oats; however, I did have maple brown sugar oatmeal packets, turns out they made a good substitute. I had five packets so I was short of 2 cups by about a half a cup so I replaced the rest with another 1/2 c of flour. They made thick fluffy cookie bars- YUMMY!!!

    I too love to use craisins instead of raisins, I have found the only store in my area to carry the cinnamon chips is Albertson's so when I shop I buy at least 4 or 5 bags of them.

    This is a great recipe! I do add 3/4 teaspoon Habernaro powder for a nice finish to flavor of the cookie. It is wonderful!

    This is ALWAYS a family & friends favorite! At Christmas time I switch out raisins for Craisins (dried cranberries) for a festive look. You can even add a tablespoon of dried orange peel for extra flavor and texture. These cookies freeze exceptionally well too and don't lose their flavor or fall apart. I tend to make double or triple batches and this recipe is great for that... some cookies don't come out right if you just double the ingredients but this one does perfectly. I have a hard time finding these chips locally so when I do, I stock up with five or six bags at a time.

    Don't skip the raisins! Without them the cookies are just not as good. They really add to the overall texture. I made a batch with cranberries one time and they turned out great.

    This is a great recipe. I have made these cookies for years now (since the first time I set eyes on cinnamon chips). Over the years I have improved this recipe, too. Add a cup of toffee chips and some finely chopped pecans for an amazing cookie. EVERYONE loves these.

    We love this recipe. My mother gave me 2 bags of Cinnamon Chips about 2 years ago and these cookies are now requested frequently by friends and family. Since the chips are seasonal I usually stock up on them so I can make the cookies year round.
