These are absolutely amazing! I made them last Christmas as part of a cookie plate as gifts for family, and I got the most requests for this recipe. Very decadent but easy to make.

These have become one of my signature cookies. I substitute mini chips for a more even texture and I line my baking pan with greased parchment for easier removal and clean-up.

My mom made this recipe with a couple of changes. She mixed 1 cup of white chocolate chips in place of 1 cup of dark chocolate chips, lightly toasted walnuts before adding them and sprinkled the raw dough with shredded coconut before baking. I wanted more Bit o' Brickle so will add more when I make these myself. This is a rich and yummy recipe!
