Oatmeal Cinnamon Chips Cookies

Ingredients

  • 1 cup (2 sticks) butter or margarine, softened
  • 1 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1-1/2 teaspoons vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2-1/2 cups quick-cooking oats
  • 1-2/3 cups (10-oz. pkg.) HERSHEY'S Cinnamon Chips
  • 3/4 cup raisins

Directions

  1. Heat oven to 350°F.

  2. Beat butter, brown sugar and granulated sugar in bowl until creamy. Add eggs and vanilla; beat well. Combine flour and baking soda; add to butter mixture, beating well. Stir in oats, cinnamon chips and raisins (batter will be stiff). Drop by heaping teaspoons unto ungreased cookie sheet.

  3. Bake 10 to 12 minutes on until lightly browned. Cool 1 minute; remove from cookie sheet to wire rack. About 4 dozen.

    BAR VARIATION: Spread batter into lightly greased 13x9x2-inch baking pan. Bake at 350°F. for 25 to 30 minutes or until golden brown. Cool; cut into bars. About 3 dozen bars.

This is ALWAYS a family & friends favorite! At Christmas time I switch out raisins for Craisins (dried cranberries) for a festive look. You can even add a tablespoon of dried orange peel for extra flavor and texture. These cookies freeze exceptionally well too and don't lose their flavor or fall apart. I tend to make double or triple batches and this recipe is great for that... some cookies don't come out right if you just double the ingredients but this one does perfectly. I have a hard time finding these chips locally so when I do, I stock up with five or six bags at a time.

Don't skip the raisins! Without them the cookies are just not as good. They really add to the overall texture. I made a batch with cranberries one time and they turned out great.

This is a great recipe. I have made these cookies for years now (since the first time I set eyes on cinnamon chips). Over the years I have improved this recipe, too. Add a cup of toffee chips and some finely chopped pecans for an amazing cookie. EVERYONE loves these.

We love this recipe. My mother gave me 2 bags of Cinnamon Chips about 2 years ago and these cookies are now requested frequently by friends and family. Since the chips are seasonal I usually stock up on them so I can make the cookies year round.

Excellent recipe!!!! I make these delicious cookies each holiday season! Have had wonderful comments from family and friends. Would make these year round if the chips were available in the stores year round.
