Mark Payne

Mark Payne is a Staff Scientist who has been with the Hershey Company for 24 years. He holds a B.S. in Mathematics and Chemistry from Baldwin-Wallace College and a M.S. and Ph.D. in Organic Chemistry from Case Western Reserve University. He also completed a two year post-doctorate with University Hospital in Cleveland, Ohio. With the HERSHEY CENTER FOR HEALTH & NUTRITION, Mark has worked on implementing analytical methods for polyphenols to be used internally. He provides chemistry expertise and leadership in the area of polyphenols. He has developed five methods for polyphenols which are currently used by The Hershey Company. Mark also has several administrative roles including Chemical Hygiene Officer and Lab Hazardous Waste Coordinator. He directs the Lab Safety Team at the Technical Center, is the Department Quality Assurance Coordinator, and is responsible for certifying outside labs.
