  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup light brown sugar packed
  • 2 cups all-purpose flour
  • 2 cups MOUNDS Sweetened Coconut Flakes
  • 1 teaspoon vanilla extract
  • 3/4 cups butter or margarine (1-1/2 sticks) , softened
  • 1-1/2 cups quick-cooking or regular rolled oats
  • 1 teaspoon baking soda
  • 3/4 cup granulated sugar

directions

  • 1. Heat oven to 350°F.
  • 2. Beat butter, granulated sugar and brown sugar in large bowl on medium speed of mixer until well blended. Beat in eggs and vanilla.
  • 3. Stir together flour, baking soda and salt; add to butter mixture, beating until blended. Stir in coconut and oats (batter will be thick). Drop by teaspoons onto ungreased cookie sheet.
  • 4. Bake 8 to 10 minutes or until edges are lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. Makes about 5 dozen cookies.
